I might say that this week’s dinner was my favorite, not only because of the food, but because of the attendees too. We all had international experiences living, studying and working abroad and everyone had a great time sharing stories- and that’s what my dinners are all about!
As a special Valentine treat, each guest also got a little heart box with mints inside (in case they really did want to go kiss someone after dinner)….
{White Chocolate Covered Strawberries with Fresh Citrus Peel &
I eliminated the sugar part of the citrus sugar that was supposed to go a top the white chocolate, because that would have made it way too sweet. So instead, I simply grated fresh lemon and orange peel; it was a very colorful presentation.
{Chicken Masala with Onions, Mango Salsa, & Naan}
My personal preference is to make a sandwich in the Naan with chicken, mango salsa and Raita because the spices and herbs do a great job of balancing each other. The onions absorbed all the grease and flavors from the chicken when roasting, an easy and yummy bonus.
I used a grill pan to get the lines on the Naan; and to make it melt in your mouth, I brushed the tops with butter.
{Indian Eggplant & Onion Dip with Homemade Pita Chips}
This was a twist on Babaganoush- a Middle Eastern Eggplant Dip- and has roasted onions and Indian spices. My wheat pita chips also made it healthy.
