Rhubarb Farewell

Rhubarb season is coming to a close (tear) so I decided to bid it farewell with one of my favorite muffins: Rhubarb & Applesauce.

{The applesauce makes the muffins very moist. I also used whole-wheat flour to up the healthiness.}

I actually made a batch and wrapped each one individually for the diners at my recent event so they could have a breakfast treat in the morning and reminisce about the dinner.
