As I was perusing my favorite grocery store’s aisles recently- I was struck that Summer Corn was abundant and I had not yet once used it in my cooking!
So last night I quickly corrected this faux pas and made a Summer Corn Salad:
{I also make a variation of this salad with grilled corn, but because I was low on time, I just sliced the kernels fresh from the cob}
I crumbled feta into the orange based dressing which added a great creaminess to the refreshing flavors.
Now that I have had my first taste I am sure corn will be popping up in my cooking over the next 2 months!
And soon you'll get to use Jersey corn!
