Ecstatic Empanadas

For my larger scale gatherings (over 20 people coming to the one mentioned here) I like to make as much in advance as I can. The Beef, Green Olive & Raisin Empanadas can be made ahead and frozen until right before baking time, so I went ahead and tried to get some things off of my to do list.
