Latkes sans the Potato

When I was invited my first ever Passover dinner, I was a little confused about what I should bring. Desserts without flour are pretty tricky, and I wasn’t sure what salad would go with the Matzo Ball Soup.

When I saw this recipe for Zucchini cakes, they reminded me of a healthier version of the famous potato latkes, so I decided to give them a try.  And they were super successful:

I also made a homemade dipping sauce using olive oil infused mayo, lemons and some fresh herbs I had lying around. Happy Passover!
