While the weather outside was frightful, especially for June, my table was delightful. And I was relieved to have my grill underneath my 2nd level deck so it is protected from the rain, so that means I can have year round grilling.
{Prosciutto Wrapped Scallops with Romesco Sauce- cooked just enough so that the prosciutto was a little crispy}
Romesco sauce can be used as an accompaniment to asparagus, fish or even a spread for crackers.
{Israeli Couscous Salad with Asparagus & Peas - Several compliments were noted that the salad and chicken went together perfectly}
Sorry no pictures of the chicken & grilled oranges—we all ate our plates before remembering! It was great to get the flavors of the Rosemary & Orange dressing with each bite in of the chicken. The olive stuffing was not too overpowering and an orange on the side were very refreshing.
{Lime Tart with Blackberries & Blueberries- I brushed thinned blackberry jam on the top of the berries to give them that glisten}
The sweet berries were the perfect complement to the tart lime curd.
