Summer Salad

So as shown here, my past two weeks were filled with delicious food. Let’s be honest, there was no holding back this girl from the carbs in Italy. I am excited to be back in my kitchen, and although I am dreaming up making similar dishes to what I have experienced, I have a need/desire to lighten up the fare this week.

And what better way than a refreshing salad for dinner?


 {I think this will make a great starter for a Mediterranean themed meal}

This is simple and satisfying with just a few ingredients that take little prep: Mixed Greens, Marinated Feta, Roasted Red Peppers and Toasted Walnuts- that’s it!

I have 2 hired events this weekend and I am looking forward to sharing the menus soon!
