Birthday Olives

As an early birthday present, my boyfriend got me this adorable olive jar as well as some super gourmet olives (he knows me too well). Rather than just eating the olives as a snack or side, which I do all the time, I decided to make a quick and easy dinner with them as the focus:
{Swordfish with Green Olive, Parsley and Pine Nut Relish with sautéed shallots}

The flavors were delish and I would even use the olive mixture as a base to a couscous salad or a topping for other proteins. Plus, I was happy to start out my birthday week with a healthy dinner, as the next few days are going to be filled with margaritas, wine and good food (with prepping for a large event for this Saturday in between!)
