A few weeks ago my boyfriend purchased a Carrot Cake from Susie Cakes and I was in heaven. I forgot how moist and delicious well made carrot cake (with cream cheese frosting of course) can be.
Because I have not been able to stop thinking of that cake since, I decided to roll up my sleeves for some baking. But instead of making a huge cake that will most likely sit around and go bad after 2 slices are eaten, I decided to transform the cake into bite-size cookies!
