Watermelon Salsa

I used watermelon again in an appetizer on another night of my recent beach vacation mentioned here. Although eating a large slice on 4th of July is as American as it can get, I decided to twist things up and make a Grilled Watermelon Salsa with Spicy Lime Tortilla Chips:


{I first grilled watermelon slices topped with chili powder, olive oil & salt before chopping it and mixing in other ingredients}

I used corn tortillas to make my chips (cooked in the oven at 350 brushed with vegetable oil} – and I loved the crispiness of them, especially when sprinkled with lime zest, cayenne pepper and salt.
