I was in relaxing Cape Cod  for the holiday weekend and could not have asked for more perfect beach weather. However, when it is hot and humid, the last thing I want to do is stand by a stove or oven. I wanted to make some fun snacks for my hosts and the first thing that came to mind was refreshing Ceviche. 
Rather than the typical Mexican Ceviche I make (avocados, cilantro, tomatoes, etc.) I went for a more citrus and summery approach and made Watermelon Grapefruit Scallop Ceviche: 
{And what better way to present the summer snack than in Margarita glasses?}
{Scallops were my seafood of choice and I cut them into small bite size pieces}
