I love focusing my desserts around seasonal fruit (seen here, here and here). It makes me feel a little less guilty by inserting some sort of healthiness with the sugar, butter and cream that usually go along side.
This week I used one of my favorite summer fruits: apricots. And I don’t mean the apricots you find at the grocery. I mean the ones that are picked from your yard or a neighbor’s tree or fresh from a farmer’s market. We have a tree in our backyard and the juicy sweetness is miles beyond anything a grocery store can provide.
Anyways, I roasted apricots with some cardamom, topped them with a dollop of vanilla-honey infused creme fraiche and voila- a seasonal luscious fruit dessert came out.
