One of the sides with the salmon for the Tuscan themed dinner first brought up here is a Shaved Summer Squash Melody:

I shaved raw squash, tossed with lemon vinaigrette and topped with crushed almonds. It’s a perfect solution for a no-cook side that highlights summer produce as well as looks formal.
