This week I hosted a cooking feast with a pineapple theme. The peak season for these sweet and tropical fruits started in March and I couldn’t wait to dive in. Each guest had to bring a dish with pineapple in it, and I made these Pineapple Glazed Chicken Breasts with JalapeƱo Salsa.
{The glaze is made of pineapple juice and brown sugar and kept the breasts juicy. I used fresh jalapeƱos instead of pickled because I thought the pickled aspect would take away from the freshness of the salsa.}
If you are looking for a dish with a pop of color, this will definitely do the trick. The glaze also ensures that you get that pineapple flavor within each bite, even if you don’t make the salsa. Plus, it will make you feel like you are on a beach vacation…
{The salsa is very similar to my mango salsa, and I will definitely make it to eat with tortilla chips and to put on fish.}
